Chef Akira Back was born in Korea and raised in Colorado, where, as a professional snowboarder, Back realized that he felt the same thrill in the kitchen as he did on his board. It was a fortuitous pivot: Back’s restaurants in Las Vegas—Kumi Japanese Restaurant + Bar and the famed Yellowtail Japanese Restaurant & Lounge—have helped propel him to culinary fame and the roll-out of his namesake brand, Akira Back Restaurants, which makes its Canadian debut at Bisha.
